When do I need a multi-step starter?

You need multiple steps when a single starter cannot produce enough cells. This is common for lagers (which need roughly double the cells of ales), high-gravity beers above 1.070, and when using old yeast with reduced viability.

How long should each step ferment?

Each step should ferment for 24-48 hours on a stir plate, or 48-72 hours without stirring. Wait until the starter has finished fermenting (no more activity, beer is clear) before decanting and stepping up.

Should I decant between steps?

Yes. After each step, cold crash the starter in the fridge for 24 hours, then decant (pour off) the spent wort. Add fresh starter wort for the next step. This avoids adding large volumes of thin, oxidised starter beer to your batch.

What gravity should starter wort be?

Aim for 1.036-1.040 (about 100g of DME per litre of water). Higher gravity starters stress the yeast and reduce growth rate. Lower gravity wastes time. A stir plate significantly improves growth rate.

Cell Growth Calculation

Required cells = Pitch rate x Gravity points x Batch size

Cells after each step = Current cells x Growth rate

A stir plate gives roughly 1.5x growth per step. Without a stir plate, expect 1.2-1.4x. Each step uses about 100g DME per litre of water (1.036-1.040 gravity).

The calculator adds steps until the target cell count is reached or a maximum of 5 steps.
