Temperature Ranges

Each yeast strain has an optimal temperature range determined by the manufacturer. Within this range, the ideal temperature balances fermentation speed with flavour development.

Clean vs Expressive

Lower temperatures within the range produce cleaner, crisper flavours. Higher temperatures produce more esters, phenols and character. Choose based on your desired beer profile.

Exothermic heat

Active fermentation generates heat. In a plastic bucket, beer temperature can be 2-4°C above ambient. A temperature controller measures the beer directly and compensates for this.
