What percentage should the base malt be?

Base malt (Pale, Maris Otter, Pilsner) should make up 70-90% of your grain bill for most styles. The base malt provides the bulk of fermentable sugars and enzymatic power. Lighter beers use higher base malt percentages.

How much crystal malt is too much?

Most brewers keep crystal malt at 5-15% of the grain bill. Above 15% the sweetness and body can become cloying. For dry beers, use 3-5%. For malty styles like ESB, up to 10-12% works well.

What about roasted malts?

Roasted malts (chocolate, black, roasted barley) are typically used at 3-10% of the grain bill. A little goes a long way. For a porter, 5-8% is common. For a stout, 8-12%. Roasted barley adds dryness while chocolate malt adds smoother chocolate notes.
