How We Calculate This

Infusion Temperature

Strike Temp = (Thermal Mass Factor / Water Ratio) x (Target - Grain Temp) + Target. Subsequent steps use the current mash temperature, accounting for heat loss over the step duration, to calculate the infusion water temperature needed.

Conversion Efficiency

Estimated from time spent in the saccharification range (60-72C). Longer rests at these temperatures improve conversion.
