How much specialty malt should I use?

General guidelines: Crystal/Caramel 5-15%, Munich 10-30%, Chocolate/Black 2-5%, Roasted Barley 3-7%, Wheat 5-50% (for wheat beers), Oats 5-15%. These are starting points — adjust to taste.

Can I use too much specialty malt?

Yes. Overuse of crystal malt (above 15-20%) can make beer cloying and sweet. Too much roasted malt creates harsh, acrid flavours. Keep individual specialty malts within recommended ranges and total specialty under 30-40% of the grain bill.

Do specialty malts need mashing?

Crystal and roasted malts do not need mashing — they can be steeped in hot water (65-75°C) for 30 minutes. Munich, Vienna, and other base-type specialty malts must be mashed as they contain unconverted starches.

What do different crystal malts contribute?

Crystal 20: light honey sweetness and golden colour. Crystal 40: caramel notes, amber colour. Crystal 60: toffee flavour, deeper amber. Crystal 80: dark caramel, raisin notes. Crystal 120: dark fruit, molasses character. Higher Lovibond = more intense and darker.

How much roasted malt is too much?

Roasted malts (chocolate, black patent, roasted barley) are very concentrated. Most recipes use 1-5% of the grain bill. Above 5%, the roast character can become harsh or astringent. For a softer roast flavour, look at debittered or dehusked options like Carafa Special.
