How long to reach equilibrium?

At the set pressure, beer reaches equilibrium carbonation in 7-14 days. Colder beer equilibrates slightly faster. Shaking the keg speeds this up considerably.

Is this the same as a serving pressure?

Only if your carbonation is already at equilibrium. If you are actively carbonating, you may be running higher pressure temporarily. Once carbonated, reduce to serving pressure.

How do I read a carbonation chart?

Find your beer temperature on one axis and your target CO2 volumes on the other. The intersection gives you the required PSI. Most charts assume equilibrium — meaning the beer has been at that pressure and temperature long enough for the CO2 to fully dissolve (typically 5-14 days).

What if my temperature fluctuates?

CO2 absorption changes with temperature. If your kegerator temperature varies, set your pressure for the warmest temperature to avoid under-carbonation. Small fluctuations (1-2°C) have minimal effect. Large swings can cause foaming problems.

PSI to CO2 Volumes

This calculator reverses the standard carbonation equation to determine CO2 volumes from known pressure and temperature. At equilibrium, the dissolved CO2 is directly related to the applied pressure and liquid temperature.

Altitude correction reduces effective pressure at higher elevations. CO2 purity scales the delivered pressure proportionally.
